This is an easy and healthy recipe that is great for school lunches!
The first time I actually had this was at Chick-Fil-A and I found a recipe that tastes very similar!
You will need:
1/3 cup mayonnaise
2 teaspoons lemon juice
2 tablespoons granulated sugar
2 tablespoons crushed pineapple
4 cups finely shredded carrots (5 to 6 carrots)
1/3 cup raisins
Directions:
1. Whisk together mayonnaise, lemon juice, and sugar until sugar is mostly dissolved.
2. Whisk in crushed pineapple.
3. Fold in shredded carrots and raisins. Cover and chill overnight before serving.
Makes 8 small servings
